From Field to Plate

One of the most rewarding aspects of harvesting game animals is being able to provide tasty and healthy meat for myself and others. I really enjoy sharing quality meals with my non-hunter friends, giving a delicious reason for a good gathering and, at the same time, hopefully shaping their opinion of hunters and hunting. However, the way game meat is prepared can be detrimental to the cause, discouraging many people from receptivity to game meat. Instead of a ‘one size fits all’ method for preparing game meat, consider treating individual cuts in a unique way that takes into account the animal’s age, sex and condition.

Here are some of my favourite ways to prepare prime cuts, tougher cuts and trimmings from game animals.
