koftas
Ingredients
• 1kg of venison rump, minced
• 3 cloves of garlic, crushed and minced, or 1 tsp of minced garlic
• Rind of ½ a lemon
• Handful of chopped fresh parsley
• 1 red onion, very finely chopped
• ½ cup of breadcrumbs
• ½ tsp cumin
• ½ tsp coriander
• ½ tsp cinnamon
• ½ tsp smoked paprika
• ¼ tsp cayenne pepper
• 1 tsp mild curry powder
• 1 tsp table salt
• ½ tsp black pepper
method
1. Combine all ingredients in a large bowl and mix well.
2. Wrap the meat around flat skewers, pressing the meat firmly onto the skewers to ensure it doesn’t fall off. (If you don’t have flat skewers, you can treat the mince mixture like patties.)
3. Brush the meat with olive oil before placing on the BBQ grill.
4. For the ultimate flavour and authentic style, use charcoal to cook the koftas. Alternatively, a hotplate works just fine. Turn the skewers over once, halfway through cooking.
Tzatziki
Ingredients
• 1½ cups Greek yoghurt
• 1 clove garlic, finely chopped
• ½ lemon, juiced and zested
• ½ handful of mint, finely chopped
• ¼ cucumber, chopped
• Pinch of smoked paprika
• Pinch of turmeric
• Pinch of cumin
• Salt & pepper
method
1. Combine all ingredients in a medium-sized bowl and mix well. Add salt and pepper to taste.
