Once in a while, a book comes along that stands out from the crowd … Feathers: The Game Larder is one such book. ‘Feathers’ is the second collaboration from Chef José L Souto and Photographer Steve Lee and is a beautifully presented hardcover book packed full of excellent wildlife photography and text.
Although being published in the UK by Merlin Unwin Books Ltd for their game bird/wildfowl species, many NZ wild game/waterfowl species are also represented throughout the book. The book contains quality information and topics from taxonomy, history and preparation of game birds and waterfowl through to numerous mouth-watering recipes.
If you’re a game/waterfowl enthusiast, or simply looking for some new recipes to impress your family and friends, this is the book for you.
We’re stocked to have been given permission to publish one of the delicious recipes from this book, Chinese Five-Spice Mallard with Plum Sauce, check it out and have a go.
