INGREDIENTS
• 4 swan breasts
• Salt to taste
• 1 Tbsp grated orange zest
• 1 orange, juiced
• 1 tsp lemon juice
• 1 tsp brown sugar
• 1 clove of minced garlic
• 1 Tbsp soy sauce
• ½ tsp dry mustard
• ¼ tsp caraway seeds
Method
1. Preheat oven to around 180°C. Rinse breasts in water and place in baking dish.
2. In a medium bowl, combine all other ingredients. Pour glaze over breasts, saving some for halfway through cooking.
3. Bake in oven approx. 30 mins or until cooked to your liking; glaze at least once while baking.
